Owners of an olive oil mill in Vartholomio, Ilia, for over a century, we understand that quality is not manufactured — it is chosen. Anassa represents the peak of what our land can offer.

Fresh sea breezes pass through the trees. The altitude lets the sun kiss every olive all day long. Ideal soil. Perfect conditions. We simply choose not to compromise.

Our harvest begins at the end of October and concludes in early January. Skilled workers with generations of experience collect every Koroneiki olive by hand — using only plastic palletboxes, never loose sacks.

After harvesting, cold extraction begins within three hours. Our three-phase extraction system at below 26°C yields a fruity, intensely flavoured extra virgin olive oil with extraordinary green colour — and acidity of just 0.1–0.3.

Preserved
to perfection

Anassa is placed into storage directly after cold extraction and held in temperature-controlled, stainless steel tanks until you request it. It arrives totally unfiltered — exactly as nature intended.

Every year the quantity differs. Climate is the one thing we cannot choose — and that scarcity is part of what makes Anassa precious.

Bottling is done by hand, upon customer demand, in specially designed glass that protects the contents.

The glass is specially tinted to shield the extra virgin olive oil from harsh light. Each bottle carries our certificate of quality and authenticity.
